Ingredients
For the Banana Almond Frozen Roll Ups
- 3 oz. Heinen’s fresh ground almond butter
- 3 ripe fresh bananas
For the No-Bake Chocolate Chip Cookies
- 1 cup Heinen’s cashews
- 1 cup Bob’s Red Mill almond flour
- 6 fresh Medjool dates, pits removed
- 1 tsp. coconut sugar
- 1 tsp. vanilla extract
- Pinch sea salt
- 1/4 cup Navitas unsweetened cacao nibs
For the Blueberry Bars
- 1 cup oat flour
- 1 Tbsp. Heinen’s coconut oil, melted
- 2 Tbsp. Heinen’s pure organic maple syrup
- 1 Tbsp. molasses
- 1 tsp. vanilla
- 1 1/2 cup blueberries
- 1 1/2 cup oat flour
- 3 Tbsp. Heinen’s pure organic maple syrup
- 3 Tbsp. Heinen’s coconut oil, melted
- 2 Tbsp. molasses
Instructions
For the Banana Almond Frozen Roll-Ups
- Place a pan in the freezer for 15 minutes.
- Mash the bananas and almond butter together in a medium-size bowl.
- Spread the mixture on the frozen pan until thin.
- Use a spatula to roll slices into roll-ups. Serve immediately.
For the No-Bake Chocolate Chip Cookies
- Add the cashews, almond flour, dates, coconut sugar, vanilla extract, and a pinch of sea salt to a food processor.
- Pulse until combined and the mixture looks like cookie dough.
- Add the cacao nibs and pulse until combined.
- Shape into cookies with your hands or a cookie press and freeze for 15 minutes. Serve.
For the Blueberry Bars
- In a large bowl, combine 1 cup oat flour, 1 Tbsp. melted coconut oil, 2 Tbsp. maple syrup, 1 Tbsp. molasses, and 1 tsp. vanilla.
- Press into an 8×8 pan. Freeze for 10 minutes.
- Combine 1 ½ cup blueberries, 1 ½ cup oat flour, 3 Tbsp. maple syrup, 3 Tbsp. melted coconut oil, and 2 Tbsp. molasses in a food processor. Pulse until combined.
- Spread the blueberry mixture over crust. Chill for 10 minutes. Serve.
