3 Lighter Ways to Enjoy Leftover Thanksgiving Turkey

If you’re celebrating a traditional American Thanksgiving, you’ll probably have a hefty portion of leftover turkey eyeing you every time you open the fridge.
Thanksgiving leftovers can be overwhelming, especially after a full day of eating foods that stray from what you eat on a daily basis. I’m here to share that it is possible to make the most of your leftover turkey without creating a second or third Thanksgiving dinner. All you have to do is incorporate the leftovers into healthier meals that you already love.
Not sure where to start? Here are three easy, healthy, minimal-ingredient ways to incorporate turkey into breakfast, lunch and dinner. They’re so easy you don’t even need a recipe, but just in case, I’ve provided the Fx™-approved ingredients and simple instructions below.

Ingredients
For the Turkey Scrambled Eggs
- Heinen's pasture raised eggs
- Leftover turkey, shredded or diced
- Leftover vegetables, diced (sweet potatoes, Brussels sprouts, green beans, carrots, squash, etc.)
- Primal Kitchen buffalo sauce
For the Turkey Salad Sandwich
- Leftover turkey, shredded or diced
- Primal Kitchen mayonnaise
- Celery, diced
- Red onion, diced
- Bell pepper, diced
- Red grapes, diced
- Heinen's walnuts or pecans, chopped
- Fresh parsley, chopped
- Ezekiel bread
For the Green Salad with Turkey
- Heinen's spring mix
- Leftover turkey, shredded or diced
- Leftover vegetables, diced (sweet potatoes, Brussels sprouts, green beans, carrots, squash, etc.)
- Cranberries
- Leftover stuffing
- Drench balsamic fig vinaigrette dressing
Instructions
For the Turkey Scrambled Eggs
- Scramble the eggs to your desired doneness.
- Once the eggs are almost set, toss in the leftover turkey and assorted leftover vegetables to warm.
- Serve with the Primal Kitchen buffalo sauce and a small side of leftover stuffing in place of toast, if desired.
For the Turkey Salad Sandwich
- In a bowl, combine the leftover turkey, Primal Kitchen mayonnaise, celery, red onion, bell peppers, grapes, walnuts or pecans and parsley.
- Toast the Ezekiel bread, if desired.
- Layer the turkey salad on one slice of bread and top with the second slice of bread.
For the Green Salad with Turkey
- In a bowl, toss the spring mix with the leftover turkey, assorted leftover vegetables, cranberries and leftover stuffing.
- Transfer to a serving bowl and drizzle with the Drench balsamic fig vinaigrette.
