Cheesy Jalapeno Cauliflower Melt with Tomato Basil Bisque

Ingredients

  • ½ Tbsp. Heinen’s extra virgin olive oil
  • ½ cup onion, chopped
  • 2 garlic cloves, finely chopped
  • 2 cups cauliflower, chopped
  • ⅓ cup pickled jalapeno slices
  • 1 cup (4oz.) Heinen’s A2 organic extra sharp raw cheddar cheese, shredded
  • 6 sliced Hero Bread classic white bread, toasted
  • 16 oz. Heinen's Daily Bites tomato basil bisque
  • Sea salt
  • Black pepper

Instructions

  1. Preheat the broiler.
  2. In a pan, heat the oil over medium heat. Add the onion and cook until golden brown, about 3 minutes. Stir in garlic and cauliflower. Cook until cauliflower is soft, 5-10 minutes. Season with salt and pepper to taste. Remove from the heat and transfer to a mixing bowl. Let cool.
  3. Add the pickled jalapeno and shredded cheese to the cauliflower mixture and mix. Divide the mixture among the toast.
  4. Broil until the cheese melts, 3-5 minutes.
  5. Warm the soup in the microwave or on the stove and serve it with the warm open-face sandwich.
