Chickpea Dusted Carrot Fries

Chickpea Dusted Carrot Fries are a satisfyingly savory snack or side dish for spring. Just like French fries but with a little less starch and a little more nutrition, they’re the perfect partner for your favorite sandwiches, wraps and burgers.
Baked until crispy on the outside and tender on the inside, my kids enjoy these carrot fries with a sprinkle of cilantro, a squeeze of lime and a bowl of hummus for dipping.
Whether you choose to serve them as a snack or a side, this is a delicious way to get your family to eat their carrots!
Chickpea Dusted Carrot Fries
Servings: 4
Ingredients
- 1 lb. carrots, washed, peeled and cut into sticks (4-inches in length, ½-inch thick)
- 3 Tbsp. chickpea flour
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1/2 tsp. Heinen's smoked paprika
- 1/2 tsp. Heinen's cumin
- 1/2 tsp. Heinen's garlic powder
- 1 tsp. Heinen's oregano
- 1 tsp. nutritional yeast
- 2 Tbsp. Heinen's extra virgin olive oil
- Green onion, chopped for garnish
- Cilantro, chopped for garnish
- Lime wedges
Instructions
- Preheat the oven to 425°F.
- In a medium-size mixing bowl, combine the chickpea flour, salt, pepper, smoked paprika, cumin, garlic powder, oregano and nutritional yeast. Set aside.
- Add the carrots to a large mixing bowl. Add the olive oil and use your hands to toss until the carrots are coated.
- Add the chickpea flour mixture and mix until the carrots are fully coated.
- Spread the carrot fries in a single layer on a nonstick or parchment-lined baking sheet.
- Bake for 20 minutes, flipping halfway through, until crispy and cooked.
- Remove from the oven and finish with fresh cilantro, lime wedges and crushed red pepper. Serve with hummus for dipping.
Note: Get creative with the spices. Za’atar, sumac, thyme, Greek seasoning, Italian seasoning or chili powder would work well with this recipe.
