Cold Citrus Shrimp Salad

Ingredients
For the Shrimp Salad
- 1 container Heinen’s fresh cooked shrimp
- Heinen's chili powder
- Heinen's black pepper
- Heinen's cumin
- Salt
- 1 large English cucumber, chopped
- 2 celery stalks, chopped
- 2 small tomatoes, chopped
- 1 package Heinen's mozzarella pearls
- 1/4 cup green onions, chopped
- Lemons and limes, cut into segments for garnish
For the Creamy Citrus Dressing
- 1/2 cup fresh dill, chopped
- 1 Tbsp. Heinen’s extra virgin olive oil
- 1 Tbsp. lemon and lime zest, combined
- Juice of 1 lemon
- 1 tsp. white wine vinegar
- 1/2 tsp. black pepper
- 2 tsp. agave nectar
- 1/2 cup Greek yogurt
- 1/2 tsp. Heinen's chili powder
- 1/4 tsp. sea salt
- 1/2 tsp. Heinen's cumin
- 1/2 tsp. Heinen's garlic powder
Instructions
- Chop the cucumber, celery, tomatoes and citrus. Set aside.
- Combine the chili powder, black pepper, cumin and salt in a bowl and toss with the shrimp.
- Toss the shrimp with the mozzarella pearls and chopped produce, excluding the segmented citrus and green onions.
- Whisk the dressing ingredients until combined.
- Pour the dressing over the salad and mix to coat.
- Top with the green onions, segmented citrus and more dill.
