Ingredients
For the Cowboy Caviar
- 3 Roma tomatoes, seeded and diced
- 2 avocados, diced
- ½ cup Heinen’s diced red onions
- 1 can (15 oz.) Heinen’s organic black beans, rinsed and drained
- 1 can (15 oz.) Heinen’s organic garbanzo beans, rinsed and drained
- 1 can (15 oz.) Heinen’s whole kernel corn, rinsed and drained
- 1 bell pepper, diced
- 1 jalapeño pepper, seeded and finely diced
- ½ cup fresh cilantro, chopped
- Heinen's tortilla chips, for serving
For the Dressing
- ⅓ cup Heinen’s extra virgin olive oil
- 2 Tbsp. fresh lime juice
- 2 Tbsp. red wine vinegar
- 2 tsp. Heinen’s honey
- ½ tsp. salt
- ½ tsp. fresh ground black pepper
- 1 tsp. Heinen’s Italian seasoning
Instructions
- Rinse, drain, and dry the black beans, garbanzo beans, and corn. Make sure they are dry.
- In a large serving bowl, mix together all of the ingredients for the Cowboy Caviar.
- Combine the dressing ingredients in a smaller bowl, then the dressing pour over the cowboy caviar. Mix to combine.
- Serve with tortilla chips.
