Crispy Eggplant Fries

Did you know that in the summer, 70% of Heinen’s Produce department is from local and Midwest farms? Eggplant comes from local farms, and it’s so delicious in the summer! We love these crispy eggplant fries that can be made in the air fryer or oven.
Eggplant is coated in Heinen’s Cage Free Eggs, seasoned Heinen’s Breadcrumbs, and Parmesan Cheese. Dip these delicious fries in Heinen’s Marinara and top with any fresh herbs you have on hand. These fries would be great as an appetizer for entertaining or side dish for a pasta dinner. Pair with garlic bread, a green salad, and Italian wine and you have a perfect meal!

Crispy Eggplant Fries

Ingredients
- 1 Fresh Eggplant, cut into ‘fries’
- 2 Heinen’s Cage Free Eggs
- 1 cup all purpose-flour
- 1 Tsp. Heinen’s Garlic Powder
- 1 Tsp. Heinen’s Onion Powder
- 1 Tsp. Salt
- 1/2 Tsp. Black pepper
- 1/2 cup Heinen’s Breadcrumbs
- 1/2 cup Heinen’s Grated Parmesan Cheese
- 1 cup Heinen’s Marinara, for serving
- Fresh basil, for serving
- Fresh oregano, for serving
Instructions
Oven directions:
1. Preheat the oven to 425F. Cover a large baking sheet with parchment paper.
2. Whisk eggs in a shallow dish. Place flour in a separate shallow dish.
3. Combine 1 Tsp. Heinen’s Garlic Powder, 1 Tsp. Heinen’s Onion Powder, 1 Tsp. Salt, 1/2 Tsp. Black pepper, 1/2 cup Heinen’s Breadcrumbs, and 1/2 cup Heinen’s Grated Parmesan Cheese in a third shallow dish.
4. Dredge eggplant fries in flour, then egg, then breadcrumb mixture until all fries are coated and place on the prepared baking sheet.
5. Bake for 10 minutes, then flip and bake an additional 10 minutes, until golden brown and crisp.
6. Serve with Heinen’s Marinara, fresh basil, and fresh oregano.
Air fryer directions:
1. Whisk eggs in a shallow dish. Place flour in a separate shallow dish.
2. Combine 1 Tsp. Heinen’s Garlic Powder, 1 Tsp. Heinen’s Onion Powder, 1 Tsp. Salt, 1/2 Tsp. Black pepper, 1/2 cup Heinen’s Breadcrumbs, and 1/2 cup Heinen’s Grated Parmesan Cheese in a third shallow dish.
3. Dredge eggplant fries in flour, then egg, then breadcrumb mixture until all fries are coated and place in a greased air fryer basket.
4. Air fry at 400F for 15 minutes.
5. Serve with Heinen’s Marinara, fresh basil, and fresh oregano.
