The following recipe and photography were provided by our partner, Megan Weimer of Dollop of Dough.

These DIY ice cream sandwiches are the perfect treat for hot summer days. They feature Heinen’s All-Butter Chocolate Chip Cookies and Heinen’s Neapolitan Ice Cream, which is made in Ohio by one of our long-term vendor partners.

Three DIY Ice cream Sandwiches with chocolate chips around the rim of the ice cream.

Neapolitan ice cream is great because you can make 3 different ice cream sandwich flavors from just one tub of ice cream! The cookie sandwiches are rolled in mini chocolate chips, but they can be rolled in other toppings like sprinkles and chocolate sandwich cookie pieces too.
