Falafel Burgers

Plant-based burgers are by far my favorite burgers to create all year long, and this falafel burger is no exception!
Traditionally falafel is fried, but I was craving something easy and light, so I decided to skip the fryer and bake these beauties instead.
Incredible for burgers, wraps, salads and even grain bowls, serve these hearty, herbaceous and good-for-you patties with scratch-made tzatziki sauce for the most flavorful experience!
I recommend making these in a big batch and storing in the fridge to enjoy warm or cold throughout the week.

Ingredients
For the Falafel Burgers
- 3 15 oz. cans Heinen’s organic garbanzo beans
- 1 cup almond flour (or chickpea flour)
- 1/2 medium red onion, diced
- 4 garlic cloves
- 1 cup parsley, chopped
- 1 cup cilantro, chopped
- 3 tsp. coriander
- 3 tsp. cumin
- 1 tsp. kosher salt
- 1/4 tsp. black pepper
- 2-3 Tbsp. olive oil
For the Tzatziki Sauce
- 2 cups Greek yogurt
- 1/2 cucumber, seeded and diced small
- 2 tsp. dry dill weed
- 2 garlic cloves, minced
- Zest and juice of 1 lemon
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
For the Pickled Red Onions
- 1 large red onion, sliced
- White vinegar
- 2 heaping tsp. kosher salt
- 2 heaping tsp. sugar
Instructions
- Preheat the oven to 375˚F and line a baking sheet with parchment paper.
- Add all of the falafel burger ingredients to a food processor and blend for 3-4 minutes until the mixture is very smooth.
- Carefully remove the blade from the food processor and roll large portions of the mixture into balls with your hands. The balls should be slightly smaller than a tennis ball, for reference.
- Place the rolled falafel onto the prepared baking sheet. Use the bottom of a plate to push each ball into a burger patty that is ½-inch thick.
- Brush the burgers with olive oil and bake at 375˚F for 20 minutes.
- Turn on the broiler and let the patties get golden brown on the top for another 2-3 minutes.
- Simply stir all of the tzatziki ingredients together in bowl. Cover and store in the fridge until ready to enjoy.
- Add the sliced red onion to a large jar. Add the white vinegar, salt and sugar. Place the lid on the jar, give it a good shake and let it sit in the fridge for 2-3 hours.
