Heirloom Tomato Sandwich with Whipped Feta & Arugula

This is the ultimate end-of-summer sandwich with ripe heirloom tomatoes sliced just as thick as the sourdough bread that holds it together. To add a hint of zesty flavor, a lemony whipped feta cheese spread is smeared on each side of the toasted sourdough bread. It beautifully compliments the spicy bite that comes from a handful of bright green arugula.
This sandwich is extremely easy to throw together and works perfectly as an appetizer, too. Simply spread the whipped feta onto Heinen’s pre-sliced sourdough and pile on sliced heirloom tomatoes and arugula. Regardless of how you serve it, you’re in for a delicious late summer bite.
Heirloom Tomato Sandwich with Whipped Feta & Arugula
Ingredients
For the Sandwich
- Heirloom tomatoes
- Sourdough bread
- Whipped feta cheese spread (recipe below)
- Arugula
- Garlic Expressions Salad Dressing
For the Whipped Feta Cheese Spread
- 4 oz. Heinen’s cream cheese, at room temperature
- 6 oz. crumbled feta cheese
- 2 Tbsp. extra virgin olive oil
- 1 lemon, zest + juice
- 1/4 tsp. black pepper
- 1/2 tsp. kosher salt
- 1 tsp. minced garlic
Instructions
For the Whipped Feta Cheese Spread
- Add all of the whipped feta cheese spread ingredients into a food processor and blend together for 3-4 minutes until light and fluffy.
- Store in an airtight container in the fridge until ready to use. This spread can be made up to 48 hours in advance.
For the Sandwich
- Slice tomatoes 1/4-inch thick.
- Drizzle Garlic Expressions Salad Dressing on each slice and allow to rest for one minute.
- Toast the bread and generously spread the whipped feta on the bottom slice.
- Add a thick slice of heirloom tomato on top of the whipped feta followed by arugula.
- Spread more whipped feta on the top sourdough slice.
- Finish by placing the top slice of bread (whipped feta side facing down) onto the top of the sandwich to hold it all together.
