Ingredients

For the Salad

  • 2 cans Heinen’s marinated quartered artichoke hearts
  • 1 carton cherry tomatoes on the vine
  • 3-4 mini cucumbers, chopped
  • 2 cups radicchio + lettuce, chopped
  • 1 package Heinen’s crumbled feta cheese
  • Fresh basil, chopped

For the Dressing

  • 1/3 cup Heinen’s extra virgin olive oil
  • 2 Tbsp. Heinen’s balsamic vinegar of Modena
  • 3 Tbsp. Heinen’s honey
  • 1 tsp. Heinen’s dried oregano
  • 1/2 tsp. Heinen’s crushed red pepper flakes
  • 1 garlic clove, minced

Instructions

  1. Add all of the dressing ingredients to a bowl or measuring cup and whisk until combined. Set aside.
  2. Drain the artichoke hearts and add transfer them to a large mixing bowl. Add the tomatoes and most of the marinade. Reserve some of the marinade to drizzle over the salad before serving.
  3. To a large serving bowl, add the chopped radicchio, lettuce and cucumbers followed by the marinated artichoke and tomato mixture.
  4. Add the feta and chopped basil. Gently toss.
  5. Finish with an extra drizzle of the dressing, if desired, and enjoy!
