Mini Corn Dog Bites

Nothing says summer quite like a corn dog, and these Mini Corn Dog Bites are about to become your new seasonal obsession!
A family friendly snack or appetizer, this recipe gives a fair food staple a bite-size, better-for-you boost, and it’s easy to make! Simply slice Heinen’s premium all beef hot dogs into small pieces and bake them in a muffin tin with a simple homemade breading. Choosing the bake instead deep fry will save you on calories and clean-up, making these mini corn dogs that much more enjoyable.
A corndog is nothing without ketchup, so I’ve included a recipe for a clean homemade option below; however, if you’re short on time, reach for Heinen’s organic ketchup or Heinen’s mustard. If I can’t make something from scratch, I always trust Heinen’s brand products to deliver the quality and taste I’m seeking.
Mini Corn Dog Bites
Servings: 24 Mini Corn Dog Bites
Ingredients
For the Mini Corn Dog Bites
- 4 Tbsp. Heinen’s unsalted butter, melted
- 1/4 cup Heinen's sugar
- 1 Heinen’s cage free egg
- 3/4 cup Heinen's milk
- 1/2 tsp. baking powder
- 1/2 cup cornmeal
- 1 cup flour
- A pinch of salt
- 2 Heinen’s all-beef hot dogs, cut in ½ in pieces
For the Ketchup
- 1 Tbsp. Heinen’s olive oil
- 3 large locally grown tomatoes, cut into chunks
- 2 tsp. Heinen’s light brown sugar
- 2 tsp. apple cider vinegar
- 1 tsp. salt
- 1 tsp. Worcestershire sauce
Instructions
- Make the ketchup. Combine the olive oil, tomatoes, brown sugar, apple cider vinegar, salt, and and Worcestershire sauce in a medium-size saucepan. Bring to a light boil, then boil for 10 minutes. Remove from the heat and use an immersion blender or food processor to smooth. Let cool.
- Preheat the oven to 400°F. Combine the melted butter, sugar and egg in a large bowl. Whisk to combine.
- Add the milk and mix well.
- In a separate bowl, combine the baking powder, cornmeal, flour and a pinch of salt. Fold into the wet ingredients.
- Spray a 24-cup mini muffin tin with nonstick spray. Spoon the batter evenly into each muffin cup. Add one hot dog piece into the center of each cup.
- Bake for 15 minutes until golden brown. Serve with ketchup.
