Just because we’re watching baseball season from the comfort of the couch rather than the stands doesn’t mean we can’t eat like we’re at the ballpark! A combination of two classic baseball bites, my Nacho Beer Cheese Sliders are everything you love about game food!

Ingredients

For the Sliders

  • 3 lbs. organic ground beef
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/2 cup shredded mozzarella cheese
  • 1 package of Hawaiian rolls

Toppings

  • Pickled jalapeños or banana peppers
  • Romaine Lettuce, finely shredded
  • Pickled red onions (recipe below)
  • Crumbled nacho chips

For the Beer Cheese

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 8 oz. beer
  • 1 cup whole milk
  • 8 oz. shredded cheddar cheese
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1 Tbsp. Dijon mustard
  • Pinch of kosher salt and pepper

For the Pickled Red Onions

  • 1 red onion
  • Apple cider vinegar
  • 1 1/2 tsp. sugar
  • 1 1/2 tsp. kosher salt

Instructions

For the Sliders

  1. Preheat the oven to 400˚F.
  2. In a large bowl, season the organic ground beef with salt, pepper and garlic powder. Mix together with your hands and press firmly into a baking sheet. You can use the bottom of a cup to press the meat down, you want it nice and thin and stretch the entire pan, the meat will shrink up quite a bit while cooking.
  3. Bake for 13-15 minutes
  4. Take the baking sheet out and carefully move the beef to a second baking sheet so that the meat does not sit in the grease. Pat the top of the large patty with a paper towel to remove any excess grease, then cover the top with the shredded mozzarella cheese.
  5. Turn on the broiler, and place back in oven for a few seconds to melt the cheese.
  6. Remove from oven and get ready to assemble!

For the Beer Cheese

  1. In a medium sauce pan, over medium-low heat, melt the two Tbsp. of butter.
  2. Add the flour and whisk until a paste forms, about one minute.
  3. Slowly add the whole milk while whisking vigorously to avoid any clumping of the flour.
  4. Once combined, pour in the beer and let the mixture warm through. It will thicken quite a bit
  5. Turn the heat down to low.
  6. Add the shredded cheddar cheese and seasonings and stir until the cheese has melted.
  7. Turn off heat, and serve immediately (on burgers, or to dip pretzels or chips into!)

For the Pickled Red Onions

  1. Slice an entire red onion and place into a mason jar.
  2. Fill the mason jar with apple cider vinegar and add sugar and kosher salt.
  3. Place the lid on, shake and store in fridge.

To Assemble

  1. With a serrated knife, slice the Hawaiian rolls in half length wise. This will leave you with an entire bottom and an entire top half.
  2. Take the beef patty and cut down the middle to create two separate halves.
  3. Place both patties on top of the bottom bun.
  4. Using the serrated knife, follow the lines and cut each individual burger out
  5. Add whatever desired toppings (The sliders pictured are topped with a generous dollop of beer cheese, pickled onions and peppers, shredded lettuce and crumbled nacho chips.)

Heinen's Grocery Store

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
