One-Pan Beef Filet with Beets, Sweet Potato and Crispy Kale

There’s one key to creating an elegant steak dinner at home, even on the busiest evenings, and I guarantee you already have it on hand. A sheet pan!
For this particular recipe, I chose to pair Heinen’s CARE Certified beef sirloin filet with sweet potatoes, beets and kale. Seasoned and placed under the broiler for only a few minutes, the beef comes out perfectly tender, the sweet potatoes are soft, the beets are vibrant and warm and the kale is extra crispy!
The unique balance of flavors and textures will have everyone around the table thinking you spent hours in the kitchen, but in reality, it’s simply a delicious dish without all of the dishes!
One-Pan Beef Filet with Beets, Sweet Potato and Crispy Kale

Ingredients
- 1 large sweet potato, peeled and thinly sliced
- 2 red beets, peeled and thinly sliced
- 10 leaves of kale
- 4 6-oz. Heinen's CARE Certified beef sirloin filets
- 6 Tbsp. Heinen's olive oil
- 1 Tbsp. Heinen's Italian seasoning blend
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions
- Preheat the broiler to high.
- In a bowl, toss together the sweet potatoes, 2 Tbsp. of olive oil, ½ Tbsp. of Italian seasoning blend and salt and pepper. Set aside.
- In a separate bowl, toss together the beets, kale, 2 Tbsp. of olive oil, ½ Tbsp. of Italian seasoning blend and salt and pepper. Set aside.
- Coat the beef with the remaining 2 Tbsp. of olive oil and season well with salt and pepper. Set aside.
- Place a sheet pan on the top rack of the oven and preheat for 4-5 minutes.
- Remove the sheet pan and evenly spread the beef and vegetables all over. Place under the broiler for 3 minutes.
- Flip the steaks and broil for another 3 minutes for a medium-rare internal temperature.
- Remove and garnish with fresh thyme, if desired.
