Pan-Fried Cod with Citrus Herb Butter

Take advantage of citrus season with this delicious cod dish! Fresh cod fillets are marinated in citrus juice and zest and then pan-fried until tender, resulting in vibrant flavor and melt-in-your mouth texture that simply can’t be beat .
What I love most about this recipe is that it’s versatile! You can reserve the remaining marinade and make a delicious citrus herb butter sauce to top the fish. Talk about an easy way to create big flavor! If you love seafood or have made a goal to eat more of it, start with this dish while citrus is in season!
Pan-Fried Cod with Citrus Herb Butter

Ingredients
- 4 fresh cod fillets
- Zest and juice of 1 orange
- Zest of 1 lemon
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup Heinen’s extra virgin olive oil, divided
- 2 Tbsp. Heinen’s unsalted butter
- 1 tsp. Heinen’s brown sugar
- Fresh thyme, for serving
- Fresh basil, for serving
Instructions
- Lay the cod fillets in a shallow baking dish. Top with the orange zest, lemon zest, freshly squeezed orange juice, salt, black pepper and 2 Tbsp. of olive oil. Marinate for 30 minutes.
- Heat a large skillet over medium-high heat. Add the remaining 2 Tbsp. of olive oil. Remove the fish from marinade and transfer to the pan. Reserve the marinade.
- Sear for 4 minutes per side, until the internal temperature of the fish reaches 145°F. Remove from the pan and set aside.
- Pour the excess marinade into the pan. Add the unsalted butter and brown sugar. Bring to a boil, then reduce to a simmer.
- Pour the sauce over fish and top with basil and thyme. Serve.
