Pomegranate Moscow Mule

Whether you are setting out to tackle “Dry January” and not consume alcohol or still indulging in an adult beverage every now and then, this drink can be made both with alcohol and as a mocktail, making it the ultimate cocktail to enjoy as you wish!
Sweet, rich pomegranate juice paired with tangy lime juice and a spicy bubbly ginger beer that gives this spin on a Moscow Mule a little kick. That is all you need! If you choose to make the alcoholic version, a simple addition of vodka and alcoholic ginger beer takes this colorful cocktail over the edge!
If you are entertaining a large crowd, you can make this ahead of time in a large pitcher so guests can serve themselves. Let guests pour their cocktail, and then set the ginger beer bottles off to the side for guests to do their own topping! Pitchers can be may an entire day in advance so the vodka really infuses with the lime and pomegranate!
Pomegranate Moscow Mule
Ingredients
For the Drink
- 1/3 cup Pomegranate Juice
- Juice of one Lime
- 1/3 cup ginger beer (alcoholic or non-alcoholic depending on your preference)
- 2 ounces vodka (optional)
Note: If you choose to serve this in a pitcher you will need 3 cups of pomegranate juice and ginger beer, 1 1/2 cups of vodka (optional) and 1/2 cup of lime juice
For the Lime Zest-Sugared Rim
- Zest of 1 lime
- 1/2 cup sugar
Instructions
For the Drink
- In a cocktail glass, filled with crushed ice, add the lime juice, pomegranate juice and vodka (if desired.) Top with ginger beer and garnish with pomegranate perils and fresh lime wedges.
For the Lime Zest-Sugared Rim
- Add sugar to a bowl and add the zest of 1 lime.
- Dip the rim of a cocktail glass into a bowl of water.
- Dip the wet cocktail rim in the lime zest sugar mixture.
