Thai Peanut Chicken Sandwiches

Ingredients

  • 4 Gerber’s Boneless Skinless Chicken Thighs
  • 1 Tsp. Salt
  • 1 Tsp. Black Pepper
  • 1 Tsp. Heinen’s Organic Garlic Powder
  • 1 Tsp. Heinen’s Organic Onion Powder
  • 1 bottle Two Brothers Thai Peanut Sauce
  • 2 Tbsp. Heinen’s Extra Virgin Olive Oil
  • 4 Heinen’s Brioche Buns

For the Slaw:

  • 1 cup Shredded Carrots
  • 1 cup Sliced mini cucumbers
  • 2 Tbsp. Sesame oil
  • 1 Tbsp. Rice Vinegar
  • 1 Tbsp. Lime juice
  • 4 sprigs cilantro, diced

Instructions

1. Combine salt, pepper, 1 Tsp. Heinen’s Organic Garlic Powder, and 1 Tsp. Heinen’s Organic Onion Powder in a small bowl. Pat chicken thighs dry, and season both sides with seasoning mix.
2. Heat 2 Tbsp. Heinen’s Extra Virgin Olive Oil in a large skillet over medium heat. Sear chicken thighs for 5 minutes per side, until golden brown.
3. Add 1 bottle of Two Brothers Thai Peanut Sauce and simmer for 2 minutes, until sauce is caramelized on the chicken. Remove from the pan and set aside.
4. Combine slaw ingredients and mix well.
5. Assemble sandwiches by placing chicken thigh and a scoop of slaw on a Heinen’s Brioche bun and serve.
