Thanksgiving Leftover Pizza

There’s only one thing better than the traditional Thanksgiving meal…the leftovers. We always have an abundance of leftover turkey, cranberry sauce and sweet potatoes. It’s my grandma’s stuffing and turkey gravy that is always gone too quickly. Man is it good! We typically start preparations the night before and find ourselves up before dawn cooking and preparing for dinner 14 hours later, so it’s normal to feel exhausted the day after. That’s why it’s really helpful to have all those leftovers on hand; however, after stuffing ourselves full of all the different dishes, you may not be craving the same foods you had yesterday.
Making this pizza is both a unique and stress-free way to change up the same old leftovers routine. It’s so easy, especially with the premade cauliflower crust from Heinen’s. It’s the perfect combination of chewy and crispy. It gets even better with my homemade sage herb butter. I like to add the herb butter before hand and bake the crust before adding all the toppings. I find that doing this adds another layer of flavor to the pizza crust and helps keep it crispy as it bakes.
The “leftovers” I chose for this pizza were sweet potato mash, kale (or Brussels sprouts) for a pop of green, turkey (of course), goat cheese and my homemade citrus cranberry sauce. I make this sauce every year for Thanksgiving! This pizza is tangy and sweet with a little saltiness from the turkey and creaminess from the goat cheese. Thanksgiving Leftover Pizza

Ingredients
For the Citrus Cranberry Sauce
- 1 1/2 cups orange juice
- 1 cup white sugar
- 2 1/2 cups fresh or frozen cranberries
- 1 Jonathan apple, skinned and diced
- ½ tsp. allspice
- ¼ tsp. nutmeg
- ½ tsp. cinnamon
- Lemon rind
For the Sage Herb Butter
- 6 Tbsp. butter, melted
- ½ tsp. sage
- ½ tsp. thyme
- ½ tsp. rosemary
- 1 tsp. oregano
- 1 tsp. garlic powder or 1 Tbsp. fresh minced garlic
For the Pizza
- 2 Heinen’s cauliflower pizza crusts
- 3 cups sweet potato mash
- 6 Tbsp. sage herb butter (above)
- 6 oz. shredded turkey meat
- 1 1/2 cups kale or Brussels sprouts
- ¼ white onion
- 4 Tbsp. goat cheese, crumbled
- Citrus cranberry sauce (above), for drizzling
Instructions
For the Citrus Cranberry Sauce
- Add orange juice, sugar, lemon rind and spices to a medium-size saucepan.
- Bring to a boil, then add cranberries and apple chunks.
- Lower the heat and let simmer for 10 minutes.
- Turn the heat off, remove the lemon rind and mash with a slotted spoon or potato masher.
For the Sage Herb Butter
- Melt the butter in a microwave-safe bowl for 30 seconds and mix in all the herbs.
For the Pizza
- Preheat oven to 425˚F.
- Spread 3 Tbsp. of the sage herb butter onto each cauliflower crust all the way to the edges. Bake the buttered crusts for 15 minutes.
- Remove crusts and top with 1 1/2 cups of sweet potato mash, onions, turkey, kale or Brussels sprouts and goat cheese crumble.
- Bake for another 10 minutes and drizzle with the homemade citrus cranberry sauce.
