What’s For Dinner? Citrus Cod

Ingredients

  • Heinen's Citrus Crusted Cod
  • Heinen's Recipe Ready Spiral Zucchini
  • Heinen’s Baby Arugula
  • Del Monte Ruby Red Grapefruit
  • Fresh Gourmet Roasted Sliced Almonds
  • Bella Sun Luci Balsamic Vinaigrette

Instructions

  1. Preheat the oven to 400°F.
  2. Place the cod on a pan and place in oven.
  3. Place a sauté pan over medium-high heat, add a drizzle of olive oil and lightly sauté the spiral zucchini. Place the squash on a plate and top with the cooked cod.
  4. In a mixing bowl toss together some of the arugula, grapefruit segments, almonds, and vinaigrette. Top the cod with the salad.

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
