What’s for Dinner? Cracker Crusted Cod
Servings: 2
Ingredients
- Melissa's Peewee Dutch Yellow Potatoes
- Ritz Crackers
- Old Bay Seasoning
- Fresh Cod Fillets
- Bota Box Mini Pinot Grigio
- Gourmet Garden Chopped Parsley
Instructions
- Preheat the oven to 350ºF. Toss the potatoes with your favorite oil and seasonings. Place on a pan and roast until tender.
- Place the crackers in a bag and crush with a rolling pin or the bottom of a sauté pan. Add some of the Old Bay to the cracker crumbs.
- Brush the top of the cod with mayo or oil and press the cracker crumbs into the fish.
- Place the cod in a pan and pour some of the wine around the fish. Bake in the oven until the fish is cooked through and the cracker crust is browned.
- Toss the potatoes with the chopped parsley and serve alongside the cod.
