What’s For Dinner? Pesto Crusted Verlasso Salmon

Ingredients

  • Verlasso Salmon
  • Dynasty Panko Breadcrumbs
  • Heinen’s Pesto Sauce
  • Seeds of Change Quinoa Brown & Red Rice with Flax
  • Cucina Amore Piquillo Artichoke Bruschetta

Instructions

  1. Preheat the oven to 400°F.
  2. Lightly oil a sheet pan, and place the salmon portions skin-side down on the pan. Brush the tops with a little bit of Dijon mustard or egg wash, and lightly season with salt and pepper.
  3. Mix the panko and some of the pesto to make the pesto crust. Press the crust into the top of each piece of salmon.
  4. Cook the salmon in the oven until the crust is lightly browned and the salmon is cooked to your liking.
  5. Heat the quinoa and rice blend according to the instructions on the package.
  6. Serve the salmon on top of the quinoa and rice blend and sauce with the piquillo artichoke bruschetta.

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
