What’s For Dinner? Vegan Stuffed Sweet Potatoes

Ingredients

  • Sweet Potatoes
  • Maya Kaimal-Everyday Chana
  • Kite Hill Sour Cream Alternative
  • Fresh Gourmet Santé Fe Tortilla Strips
  • Lime

Instructions

  1. Preheat the oven to 350˚F.
  2. Poke holes in the sweet potato with a fork, cover lightly in olive oil and season with salt. Bake the potato until tender.
  3. Heat the Chana according to the directions on the package. Split the potato and top with the heated Chana and a dollop of the sour cream alternative.
  4. Sprinkle with a few tortilla strip and a squeeze of lime.

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
